Roast Chicken with Potatoes, Asparagus

Talk about one-pot meal! The ease by which this dinner came together was only surpassed by how incredibly moist and flavorful it came out.

Whole organic farm-raised chicken stuffed with lemon, thyme, butter; seasoned generously with cracked salt and pepper and roasted at high heat over a bed of red potatoes. Asparagus spears roasted in olive oil with a fresh squeeze of lemon. Dinner and done.

Back from a long, unintended hiatus. Turns out med school is a time sink— shocking!

Spaghetti with meatballs. Homey, savory, comforting. Let me tell you about the meatballs. Those meatballs— made of a rustic mix of ground veal, pork and grassfed beef, all bound together with milk-soaked bread and garlic, so much garlic. A hint of lemon zest, generous parsley and oregano for an unexpected freshness. Browned in olive oil then simmered ever so gently in a sweet tomatoey bath indolent with the taste of those end of summer tomatoes. 

That’s the kind of spaghetti and meatballs I got to eat last week. A dream meal. Especially when cooked to perfection to celebrate the completion of my USMLE boards by C, who normally lets me take the limelight in the kitchen. Thank you for taking care of me when I cannot!

Funky, creamy Oma; grassy, sharp Cabot Clothbound; buttery, sweet Bayley Hazen.  Paired with fig jam and truffle honey; raisin rosemary crackers and sesame crisps.
(Turns out I must love Jasper Hills, as it was wholly unintentional that each of these very different but delicious cheeses hearkened from the same cheesemakers!)

Grilled veggie salad
